Rainbow Pizza

We celebrated the last day of Pride Month with a colorful and delicious rainbow pizza! We had fun making a few versions based on each of our favorite toppings. As our 2 year-old took his first bite, he gleefully said, “I eat the rainbow, yum!”

We paired this vegan rainbow pizza lunch with a few of our favorite stories on equality, acceptance, self compassion and kindness. Embracing the beauty of loving and accepting yourself and others for exactly who they are without judgement. It’s so amazing to see our 4 year-old really grasp the concept that although other people’s families may look different than ours (in many different ways), we can still love and support one another for exactly who we all are. Always focusing on the heart. As he so beautifully states, “We are all human and we are all enough.” Love and food can come in many different colors and shades. The Dough

We have been perfecting a pizza dough, and have landed with this thicker, crunchier version that we all love. Everyone has their own favorite pizza crust, so definitely adjust it to fit your palette!

  • Mix these ingredients together in a bowl: flour, baking powder, salt, oat milk, olive oil
  • Kneed for 10 minutes on lightly floured surface
  • Roll into large ball and let it sit, covered for 10 minutes
  • Roll it out on lightly floured surface and toss
    • Thinner: more rolling and tossing
    • Thicker: less rolling and tossing
  • Bake it for 8-10 minutes at 400 degrees before moving to the next steps
  • Gluten Free Caveats: if you are using gluten-free flour, increase amount of flour to 3 cups. If you want the dough to stick together like pizza (made with all purpose flour), you could add one flax egg. We don’t recommend anthem gum and guar gum as they are not the healthiest. 

The Basics

Add in your basic ingredients onto the partially cooked dough.

  • Tomato sauce: we use either plain canned tomato sauce or our favorite jarred pasta sauce. If using the plain tomato sauce, we like to add in garlic, onion, salt and pepper to give it a nice flavor.
  • Vegan cheese: add in your favorite vegan cheese or just leave it cheese-less. 

The Rainbow Toppings

Now it’s time to add in some flavorful and yummy toppings. We tried a few versions today. The recipe card details what we used to create our favorite version today. 

  • Red: bell pepper or tomatoes
  • Orange: bell pepper, carrot
  • Yellow: bell pepper, squash, corn, pineapple
  • Green: broccoli, bell pepper, zucchini, spinach, arugula
  • Blue/Indigo/Violet: kalamata olives, purple carrots, purple onion

Bake It (again this time as a pizza!)

  • Heat oven to 400 degrees
  • Bake for 15-20 minutes for thinner crust and 30-40 minutes for thicker crust
  • Serve and enjoy!
